Workshop Description:
Miso Making: Koji, Culture & Craft
Discover the magic of koji — the essential mold culture behind many of Japan’s most beloved ferments — in this hands-on miso-making class.
We’ll dive into the world of Aspergillus oryzae, the powerhouse behind traditional foods like sake, soy sauce, miso, and pickles, and explore how this single ingredient plays a central role in Japanese fermentation. You’ll get to taste a variety of misos, learn how they differ, and gain inspiration for using them in your own kitchen.
Then, we’ll roll up our sleeves to mix and mash the ingredients for your own batch of miso, which you’ll take home to ferment — a full 1lb jar of future umami! We’ll finish class with a simple, nourishing miso soup (recipe included) and sip it together.
Whether you're new to fermentation or looking to deepen your understanding of koji culture, this class will leave you inspired, informed, and ready to ferment at home.

About the Instructor

Hiroko Kurosaki
Fermentation Educator & Chef of Traditional Japanese Cuisine
Hiroko Kurosaki was born in a rural city in northern Japan, where a deep connection to nature and seasonal living shaped her early understanding of food. A trained and certified chef in Japan, Hiroko specializes in Zen temple cuisine (shōjin ryōri) and macrobiotic cooking, with over 20 years of experience making miso and other traditional ferments.
Her passion lies in sharing the abundance of nature through cooking — blending ancient techniques with seasonal, local ingredients. Her classes weave together fermentation, cultural tradition, foraged foods, and herbal wisdom, inviting students to reconnect with food as a source of well-being, community, and environmental harmony.
Now based in Northern California, Hiroko continues to teach and inspire through hands-on workshops that nourish both body and spirit.

By signing up for a class, you agree to these policies:
You may cancel a class for a full refund or class credit 14 days before the start date of the class.
All scheduled classes and workshops start and end on time. Please be prompt in your arrival and departure, as we often have other classes starting after yours. Arriving 15 minutes late to a class counts as a no-show, and no make up class will be offered. Instructors are subject to change.
We reserve the right to cancel any class due to low enrollment or unforeseen conflicts. If a class is cancelled, we will do our best to reschedule the session. If you are unable to attend the rescheduled class, you will be issued a refund.
Please note that we may take photos during the workshop to use on social media. If you do wish to be photographed, please let the teacher know when you arrive.
