In this workshop, you will:

  • Discover the fundamentals of fermentation, including the science behind the process and the benefits of using fermented ingredients.

  • Explore various types of peppers and other ingredients that can add depth and complexity to your hot sauce.

  • Get hands-on experience in crafting your own hot sauce from scratch, incorporating your choice of peppers, aromatics, and seasonings.

  • Learn safe fermentation practices to ensure a successful and delicious end product.

By the end of the workshop, you'll have created the base of your own hot sauce to take home and ferment, a bottle that we finish in class from pre-fermented ingredients, and the skills and confidence to experiment further in your own kitchen.

About the Instructor

Andrea Hurley

Andrea Hurley

Ceramic Artist and Culinary Experimenter living in Nevada City

Originally from New England, she studied art at University of Southern Maine. After moving to the SF Bay Area to pursue her creative practice, she managed a large community studio in Berkeley where she taught classes in clay and firing techniques in gas and soda kilns. Now living in the woods outside of Nevada City, Andrea produces functional and sculptural objects from porcelain and native clays in her home studio, firing in her experimentally designed, handmade wood kiln. Also at home, there is never not something fermenting. After discovering the wide range of possibilities in fermentation, Andrea makes everything from sauerkraut, kimchi, and miso, to kombucha, shrubs, and wild-crafted sodas. For the past few years, Andrea has also farmed grapes and produced wines and ciders from local Sierra foothill vineyards and orchards. She fostered this knowledge of natural winemaking by working with winemakers in Sonoma county, the Rhone valley, and the Republic of Georgia. As a teacher and DIY polymath, Andrea strives to empower and inspire others to explore the joys of experimentation in creative pursuits.
